Zucchini, Corn and Black Bean Salsa

  • 1 fresh lime juiced
  • 2 tablespoons local olive oil
  • 1 tablespoon local honey
  • 2 teaspoons local Mister Burns Killer Bees Honey Jalapeño Tomatillo Hot Sauce
  • ¼ teaspoon ground cumin
  • 1 large local fresh garlic clove minced
  • 2 ¼ cups local fresh yellow corn kernels 3 ears
  • ½ cup local chopped onion
  • 1 medium local zucchini diced
  • 1 cup local halved grape tomatoes
  • 1 can 15 oz. black beans, drained and rinsed
  • Pinch Kosher salt


  • Whisk lime juice, oil, honey, hot sauce, cumin and garlic together in a large bowl.
  • Add corn, onion, zucchini, tomatoes and black beans; season with a large pinch of salt. Refrigerate for 2 hours before serving.
