Savory Mushroom and Leek Galette

  • 4 tablespoons local extra virgin olive oil such as Green Bay Olive Oil Company
  • 1 large local leek thinly sliced
  • 2 local garlic cloves minced
  • ½ teaspoon dried red pepper flakes
  • Kosher salt and black pepper
  • 1 pound local mushrooms any kind, stemmed, cleaned and roughly chopped
  • 3 local fresh thyme sprigs leaves only
  • 1/2 cup frozen peas thawed
  • One 10-inch pie dough round
  • 2 ounces Red Barn Family Farms 3 Year Aged Cheddar Weis Cheese shredded
  • 1 large local egg beaten


  • Preheat the oven to 425°F. Line a sheet pan with parchment paper.
  • Heat 3 tablespoons oil in a large skillet over medium heat. Add leeks, garlic and red pepper flakes. Season with Kosher salt and pepper. Cook, stirring occasionally, until the leeks are soft, about 4 minutes. Remove from the pan and set aside.
  • Heat remaining 1 tablespoon olive oil; add the mushrooms. Cook until tender and golden brown, about 10 minutes.
  • Remove from heat. Stir in reserved leeks, thyme and peas.
  • Arrange pie dough on the prepared sheet pan.
  • Spoon the vegetables into the center of the dough; spread into an even layer, leaving a 1-inch border. Sprinkle with cheese. Fold edges of dough over the filling, overlapping slightly.
  • Brush dough edge with egg.
  • Bake until the crust is golden, about 25 to 30 minutes.
