Peach Salsa

  • 1 tablespoon granulated sugar
  • 2 tablespoons white wine vinegar
  • 1 tablespoon local olive oil
  • 1 tablespoon lemon juice
  • 1 cup chopped peeled fresh local peaches
  • 1 local tomato chopped
  • 1 small local sweet red pepper chopped
  • 1 local garlic clove minced
  • 1 local jalapeno pepper seeded and chopped
  • 2 tablespoons finely chopped local red onion
  • 2 tablespoons minced fresh local cilantro
  • Kosher salt


  • Whisk sugar, vinegar, olive oil and lemon juice together in a small bowl; set aside.
  • Combine peaches, tomato, red pepper, garlic, jalapeno, red onion and cilantro together in a bowl.
  • Pour in reserved dressing, season with a pinch of Kosher salt and stir well to combine.
  • Cover and refrigerate for 2 hours.


Serve salsa with locally made tortilla chips
Spoon over grilled local chicken or salmon
