Let’s Cook with Sorrel this Spring
What Is Sorrel?
Sorrel is an herb with a sharp, lemony flavor. Sorrel is a cool-weather herb that makes its way to markets in the spring. Try it in this simple Pesto recipe.
Sorrel Pesto
Ingredients
2 cups local sorrel leaves
2 tablespoons pine nuts or sunflower seeds
2 cloves local garlic
½ cup local olive oil
½ cup local fresh grated Parmesan cheese
Kosher salt and fresh ground black pepper
Instructions
Combine sorrel leaves, pine nuts (or sunflower seeds) and garlic in a food processor and process until very finely minced.
With the machine running, slowly drizzle in the oil and process until the mixture is smooth.
Add cheese and process very briefly, just long enough to combine. Season to taste with salt and pepper.
Toss with hot pasta, spread on crostini or serve spooned over fish or chicken.
