Asian Style Cucumber Radish Salad
Ingredients
- 2 large thin-skinned local cucumbers (about 1 1/2 pounds), thinly sliced
- 6 large local radishes ends removed and sliced
- 3 tablespoons seasoned rice vinegar
- 1 tablespoon soy sauce
- 1 teaspoon sugar
- 1 small local garlic clove minced or puréed
- 1 teaspoon minced fresh ginger
- ½ teaspoon Sriracha sauce
- Freshly ground pepper
- 2 tablespoons dark sesame oil
- 3 tablespoons local sunflower oil
- 4 stalks local scallions white and light green parts, very thinly sliced
Instructions
- Place cucumbers and radishes in a bowl
- Whisk together vinegar, soy sauce, sugar, garlic, ginger, Sriracha and pepper. Slowly whisk in sesame and sunflower oils.
- Add scallions and dressing to vegetables and toss gently to combine.
- Cover and refrigerate for 2 hours before serving.
